Kanchamba is a traditional Thakali finger food made with buckwheat, native to the villages of the Mustang valley in Nepal. It is rarely found outside the region, and even more rarely found prepared authentically at a restaurant in West Bengal.
What Is Buckwheat in Thakali Cuisine?
Buckwheat (locally called “phapar”) is a staple grain in the high-altitude Himalayan regions where rice and wheat don’t grow well. In Mustang, it forms the base of several traditional preparations: Ghoken (buckwheat pancake), Kanchamba (finger food), and Dhido (buckwheat porridge). Buckwheat has a distinctive earthy, slightly nutty flavour and a satisfying, dense texture.
How Is Kanchamba Made?

Kanchamba is made by working buckwheat flour into a stiff dough with water and salt, then shaping it into small log-like rolls that are steamed and sometimes pan-finished. The result is a dense, satisfying snack with a firm bite and a mild earthiness. It is served as a starter or snack, and at Mustang Thakali is available plain (200) or with chilly (220).
What Does Kanchamba Taste Like?
Kanchamba has a wholesome, earthy flavour from the buckwheat — hearty rather than delicate. The Chilly version adds a kick that brings out the nuttiness of the buckwheat. It is best eaten hot, straight from the kitchen.
